Boulder, CO, is a really fun town in which to be a food writer. The restaurants are varied, creative and delicious. To the north and east, the farmland surrounding the city proper provides amazing local produce and meats. And as anyone who has heard of Boulder already likely knows, we are also very passionate about healthy eating. In other words, I live in a super delicious town where it’s exciting to check out new businesses and foods.

Fresh on the Boulder scene, Beyond Broth specializes in convenient single-serving packets of organic, vegan broths. You can add 8-12 ounces of boiling water to a packet to create a tasty soup to calm upset stomach, support a cold, supplement a cleanse or elimination diet, or to sip for warmth on a cold day.

The Best Sweet Potato Soup Ever
Yum. The recipe was simple, requiring only a sweet potato (which I microwaved), some coconut oil, and leek or onions. As long as you have a good blender — I like the stick blender here — recipes that need only the broth and minimal ingredients are refreshingly simple.
Of course, Beyond Broth thinks this recipe is for two servings. I scoff. Maybe as a snack? Or if you count my healthy appetite and me as two? Because this was a satisfying meal for one alongside a toasted, crusty roll. The details on the Vitality:
Our Vitality Broth is made with our base broth which includes: all organic sweet potato, beet, carrot, broccoli, spinach, garlic, celery seed, parsley, sea salt & black pepper, lemon plus the following herbs and spices to promote wellness.
Rosmarinus officinalis (Rosemary): Rosemary supports circulatory system function. The circulatory system delivers oxygen to the brain which is an essential part of memory, concentration and overall brain function. Rosemary also supports the digestive and immune systems.
Thymus vulgaris (Thyme): Thyme is known to lift the spirit and invigorate the body. It also promotes digestion.
Capsicum spp. (Cayenne pepper): Cayenne pepper has a kick, jumpstarting first in our mouths and supporting our circulatory system.
On the downside, Beyond Broth isn’t the cheapest option at the store, with an MSRP of $2.49 per packet, down to $2.20 per packet if you buy in bulk. This product is top-shelf quality and highly specialized, however, most appealing to athletes, those seeking nutritional medicine for health conditions, and people with specialized diets. If it suits your needs, it’s worth the cost for the nutrition and fresh, bright flavors.
Personally, I’d happily throw a few packets in my bag the next time I travel, because you never know what kind of food will be accessible on the road. With a travel mug and hot water, you can have a healthy organic, vegan and — most importantly — tasty option on demand.
