The Colorado Club Saloon

A fun new player hits the Pearl Street restaurant scene in Boulder in the form of The Colorado Club Saloon, the latest concept from local hospitality group Half Eaten Cookie. As a local food writer, I got a sneak peak of their fresh, upscale pubfare.

While the patio on the street is sure to be the place to be in nice weather, the interior of the Colorado Club is a bright bar and restaurant with a classed-up rusticity that makes it feel both very true to the region and very welcoming. Sports plays on several large screens, though not usually aloud, making the sports-bar element optional. But trust that on weekend evenings, the Club’s live music makes the whole place hop.

When I visited for lunch, the food was impressive. The wings (chicken or cauliflower) and the shrimp and grits both brought the heat. The chicken sandwich was juicy and massive, and the flatbread crisp, light and nicely baked. If you’re visiting for the saloon element, the bar program looks great and highlights tons of regionals brands and flavors. For lunch, I tried all of their delicious mocktails: the One Horse Town, Hot Girl Summer and If You Like Pina Coladas. (Note: The tajin rim on the Hot Girl is for all genders, don’t miss out.)
