C Burger Boulder

A well made burger is a thing of beauty, and when done well, I’m a fan of all varieties. Beef, turkey, chicken and veggie patties, with bacon or goat cheese or pretzels for buns, it’s all tasty. The crispy smashed patties at C Burger’s location in Boulder, however, feel as close to the original hamburger as you can probably hope for in the 21st Century.

Using only local and regenerative beef, C Burger successfully hones on the burger essentials of serving fresh, quality ingredients with cheer. They offer classic cheeseburgers as singles or doubles but also bacon cheeseburgers and burgers with green chile, barbecue sauce, or mushrooms. I found the mushroom gravy of the latter — the S2 Burger with tallow mushroom sauce — to be super nostalgic.

On top of the environmental and economic impact of using only local, organic and sustainably raised beef, C Burger is also notable for their use tallow. They use this beef fat in place of processed oils through the restaurant’s kitchen, which in addition to being more natural, adds a ton of flavor.

Especially to the french fries!! Apparently McDonald’s first fries were cooked in tallow, and at C Burger the tallow-cooked fries — and onion rings — come out crisp, fresh, golden and so, so, good. Made in house, the soft-serve ice cream is also worth trying, perhaps swirled chocolate and vanilla into a cup to share with a friend.

With one another location in Englewood, C Burger’s new place at 921 Pearl Street in downtown Boulder is ideally placed for both local lunches and tourists.
